Pinnacle Low Alcohol dried yeast offers a solutions for larger brewers who use distillation or membranes to produce 0.0% ABV beer with significant malt and energy savings, compared to regular yeast strains.
Furthermore, Pinnacle Low Alcohol is a unique low alcohol strain, with a fast onset of fermentation, good sedimentation behaviour, absence of off-notes like 4-vinyl guaiacol (spicy-clove) and good ester and hop aroma expression.

Maltose-negative yeast: This strain does not ferment maltose, one of the main sugars in wort, limiting alcohol production to around ±0.1% ABV per degree Plato, which enables the creation of low alcohol or near non-alcoholic beers.

Clean aroma and flavor: It produces beers with very low worty and grainy notes, and lacks phenolic off-flavors, resulting in a neutral and clean profile.

Fermentation traits: It has a very fast fermentation rate with medium flocculation, fast diacetyl reduction, and performs best at fermentation temperatures between 18–22°C.
