Pinnacle Bottle Conditioning Yeast has been expertly selected as a premier choice for bottle‑ and cask‑conditioned beers. As one of the few non‑phenolic, low‑DMS strains available, it enhances the quality of refermentation by delivering a clean, neutral flavour profile that preserves the character of the finished beer.
This strain offers fast and consistent fermentation performance during refermentation and does not consume maltotriose. This characteristic makes it easier for brewers to achieve reliable alcohol and carbonation targets with confidence, particularly in beers where precise CO₂ levels are critical. Pinnacle Bottle Conditioning Yeast is recommended for conditioning beers with a starting ABV of 10% or lower.
The yeast is supplied as an active dry brewing yeast and is packaged in 500 g vacuum packs. At packaging, the product contains greater than 93% dry weight and a viable yeast count exceeding 6.0 × 10⁹ cfu per gram. Levels of non‑Saccharomyces species and total bacteria are tightly controlled, each measuring less than one colony‑forming unit per 10⁶ cells.
Storage and handling
Pinnacle Bottle Conditioning Yeast should be stored under dry conditions at 4–10°C. The vacuum package remains hard until the seal is broken. Once opened, packs should be resealed if not fully used, stored at 4°C and used within five days. Shelf life is three years from the production date when stored correctly.
Rehydration and use
For best results, rehydrate using ten times the weight of yeast in sterile wort below 5° Plato or sterile water at 28–35°C, with an optimum temperature of 30°C. Sprinkle the yeast gently onto the surface to avoid clumping, stir carefully, and allow to stand for 15–20 minutes before dosing into fermented beer alongside the required dextrose for carbonation.
