Eoin completed his Msc in Biotechnology at the University College Cork, where he examined yeast diversity in cider production. He recently completed his PhD at the University of Nottingham examining the role of mtDNA in brewing yeast.
When he isn’t looking at yeast, he can be found photographing mushrooms for the Irish Fungal Society website (which he also manages).
As a proud Irishman, he enjoys a good stout, and as a prouder Cork man Beamish. He is also very fond of Belgian style ales, owning the book ‘How to Brew like a Monk’.
