Crystal Balance is a protective colloid which inhibits the formation, or nucleation, and subsequent growth of tartrate crystals in wine.
It is a polysaccharide with a delicate balance between degree of polymerization, degree of substitution and uniformity in order to provide effective stabilization with low viscosity and reduced formation of gels.
